Leftover Creamed Spinach and Blue Cheese Frittata

It is pretty rare when I don't have somewhere to be in the morning. I absolutely love breakfast/brunch, but my morning routine usually consists of grabbing a granola bar or yogurt and hitting the road. Today, however, I had zero morning obligations and decided I would make something special for myself. Frittatas are SO easy. They are basically a giant omelette that you finish cooking under the broiler in your oven. And they taste good with any number/combination of ingredients. Any veggies or cheeses or meats that you would enjoy in an omelette, you will also enjoy in a frittata. At my house we try really, really hard not to waste food, so we are major leftover eaters. I made some creamed spinach the other evening that we didn't finish so that is how it ended up in my frittata breakfast this morning. I added some blue cheese before I stuck it under the broiler and JEEEZ, it came out pretty delicious.

Fruit pies are so delicious, and I don't really feel guilty eating them because they are mostly made of fruit. The crust, however, is a whole different story. I got this recipe off of smittenkitchen.com, and the basis of its appeal was not only that it was an apple & plum combo (YUM), but also that it was a single crust pie (no bottom crust). Now, I know what you're thinking, "the crust is the best part of a pie..." But I'm telling you, you will not miss the bottom crust because the top layer of crust is SO delicious. It tastes like a buttery, sugar cookie. Yikes, so good!

Things to keep in mind when making this pie:

a) You WILL make a mess and get flour all over yourself

b) Your dough WILL stick to you rolling pin if not refrigerated long enough.

I can't even describe how excited I get over this special time of year. I think it's mostly due to the fact that it stops being unbearably hot outside. I've been spending my evenings off hanging out on our balcony; reading, smoking, drinking, chilling, and especially enjoying mid-6os temperatures. Muy bien.

Behold, The Carnival Squash

I received this beauty in my bi-weekly produce delivery; I'm not sure I'd have the nerve to purchase something so exotic looking on my own. For the past week I considered keeping the squash as a part of my home's autumn decor, as it did make a fine napkin/paper weight on my kitchen table. But yesterday evening I mustered up the courage to cook this thing, basically because I found a fantastic recipe for it on my favorite food blog, smittenkitchen.com.

Here are the photos, as proof that I did dissect this dinosaur egg-ish looking thing, yielding a rather tastey product, something like that of a sweet potato drizzled with a spicy & tangy vinaigrette.

Basil & Walnut Pesto

I wish my afore mentioned basil plants were fruitful enough to produce a batch of pesto, but luckily I have friends that have more basil than they know what to do with (they could wipe their tush with it, ew sorry). So I love making things like pesto because you can switch out any of the key ingredients and it still turns out delicious. Unfortunately, pine nuts are ridiculously expensive, and I don't think I've ever made a traditional pesto with them for that reason. I can tell you that sunflower seeds, walnuts, and almonds work just fine. Or if you don't have any basil lying around; cilantro, mint, parsely, spinach, kale, or any combination of those will be yummy. I do think that good olive oil, fresh garlic and lemon juice are clutch components to a good pesto, and salt and pepper of course. The rest is up to you, go nuts, and enjoy.

Poor pancho, hates the sound of the food processor or blender. Hurts his big ears.

Basil babies

A few months ago I decided to give a go at growing some herbs. I love cooking with fresh herbs and hate buying a huge bushel at the market and using only 1/2 before the rest goes bad. So anyway, I lerrrrv cilantro and basil. My cilantro plants failed miserably, their little stalks were too skinny and flimsy to support their leaves. But my basil plants seem to be coming along, slowly but surely, smelling sweet and enjoying the open window air and light.

Great balls of Meat

Haha, pardon the title of this post, I simply could not resist. Anyway, I've recently been weening myself out of my comfort zone of vegetarian cooking and exploring the world of meat preparation. To me, there is nothing more comforting than a big bowl of pasta and meatballs, well maybe some homemade mac n cheese, but I'll get to that at a later date. Making meatballs was a lot easier than I thought it was going to be, much like playing with playdoh actually. Photographing the meatball making process, however, was a little tricky. There was a lot of washing the raw beef bits off of my hands over and over again in order to snap a few shots, while rotating the meatballs in order to ensure even browning on all sides. An assistant would have been nice! Also, meat is not the prettiest thing to photograph, especially under the tungsten lighting in my kitchen. All in all, the meatballs with marinara were delicious, according to myself and my taste testers. More meaty recipes in the future, and hopefully a few more beautiful photos of meat, too.

The Watermelon Radish

Every other week, my household gets an organic produce delivery (www.palmettoorganics.com if anyone is interested in giving it a try). Each delivery is a big bag filled with different fruits and veggies, some of which I am very familiar, and some... not so much. This passed delivery was one of those "not so much" times; contained within my big bag were six "watermelon radishes." I like to think of these surprises as an opportunity to try to cook something I've never tasted before and hope that it turns out pretty good. I figured it would be pretty similar to a regular radish, and I had some bok choy and several other veggies that I had no real plans for, so when in doubt- I STIR FRY. I began the most difficult part of the veggie stir fry process (Chopping everything) and I was pleasantly surprised at how pretty these little radishes were, and how the name watermelon radish probably came to be (DUH!)

Their vibrant pink insides were too lovely not to photograph.

Carrot Cake of Love

Friends, Nate and Caroline, got hitched yesterday! It was a wonderful wedding accompanied by the best idea ever: instead of having a big ol' expensive wedding cake, they had all of their guests make whatever dessert they wanted and ended up having a ridiculous amount of different sweet dishes at their reception. Ranging from cupcakes, ginger snaps, moon pies, cobblers, cakes, etc...

Anyway, I made a carrot cake with maple cream cheese frosting, a recipe that I borrowed from an amazing food blogger, smitten kitchen. It ended up being super delicious and will definitely be something I will make again, accompanied with more pictures from beginning to end (like grating 3 cups of carrots and preparing the other 20 ingredients that went into making this dessert!) But here is the finished product, with a heart of walnuts on top. Mazel Tov to the newlywed Mr & Mrs Edwards!

Simmer for 1 hour on the stove. Wish I had a prettier jar to put it in though.

A new direction

There comes a time in one's life when one must realize what it is that they love to do and then figure out how to apply that into a potential career (in hopes that one will not hate their job for their entire life). You might be thinking, 'Wait, aren't you a photographer who, therefore, loves taking photos?' The answer to that question is yes and NO. There are many types of photography that I hate doing. So in an attempt to be proactive and figure out what part of the photographic world I can see myself fitting into, I've been doing some serious pondering, AND COOKING. I absolutely love food; I love to eat food, buy food, look at food, cook food, etc you get the idea. Therefore, I am going to give food photography a shot, no pun intended. So a description has been added to my blog title and it reads : Blogging by kelly C, an exploration in photography and culinary experimentation. Yes, culinary experimentation, because I am not in any way trained in any sort of culinary techniques, or food styling for that matter, which happens to be a HUGE part of photographing food. So here's my blog, doing what I love and getting down and dirty in my kitchen. Bon appetit!

As if the holga camera wasn't unpredictable enough, I decided to attach a polaroid back to mine. My first 10 exposures were iffy, first not enough light for the ISO 60, then too much when i tried to take pictures of my friend on a super sunny day at the beach. Here's what i've managed to produce so far... and hey, I have 60 more polaroids to mess around with too. Hopefully more successful holgaroids to come, maybe some transfers too!! Yay alternative photo!

It's been about 3 months since my last post on this thing and summer is coming to an end. Funds have been low and I've been sitting on film of summer time for quite a while. I had the pleasure of visiting Richmond, Va in July with some best friends of mine. The city reminded me a lot Saint Augustine, full of charm and southern goodness, minus the blackberries. I was really pleased to look over this roll of film and hope to return to Richmond again, some time...

So I haven't had much to blog about lately, but I found this roll of film today and decided to scan it. It's from about a month or so ago.... the pictures are of a weekend getaway we took down to melbourne beach, FL. We stayed at Bryan's uncle's amazing house on the st. johns river. While we were down there we stopped by the cocoa beach pier during the peak of spring break and saw a guy with pigeons all over him and some European tourists who wear socks with their sandals. On the end of the roll there were a few photos of our easter breakfast at home, where I forced Bryan to color easter eggs with me and eat strawberry banana pancakes. Hooray for random rolls of film!

hey hey. So i'm trying to get a group of people together who would be interested in renting a warehouse space downtown. The space could be used for the following: art studio space, gallery space, musical practice/performing space, bike building space, storage space, hang out space, etc.... I really want a place to have shows (art, music, etc) all the time, and not just once a month like the art walk. If we get enough people together, the fraction of the rent that we would all have to pay would be minimal, and we can generate money via small covers for shows and stuff. Please please please contact me if you or anyone you know is interested. Let's make this happen! YEA!

These photos don't even begin to describe how awesome these two ladies are, but hopefully document the end of an old chapter of our lives and our friendship that started in st. augustine. I need to correct and clarify my last post about my work being published in a surfing magazine. It turns out that the magazine is brand new and is called "MorSurf"- a modern surf magazine. I'm not sure if there is an affiliation with the other mag or where I got that idea from. Either way, I'm freakin ecstatic about it. Also, for my friends who are not involved in surf culture, your quiver is basically your board collection. I only know this because my boyfriend's longboard quiver is taking over our tiny apartment. ok- i think the air is clear now.

Hello friends. I haven't posted for a little while, and i'm waiting for some film to get developed to scan and post soon. But in the mean time, here are some tidbits of boredom from my glorious day off yesterday. enjoy!

Bryan has been bringing home tons of flowers from the weddings at the hotel. They just throw them away so it's not really stealing. Having fresh flowers in the house is awesome!! I thought this one was particularly nice.

Hello. I'm a first timer so don't hate.

I started this blog as a less formal extension of my website, picturebykellyc.com, which will be up and running as of next week (i hope). So in honor of breaking my blog "cherry", i'm going to post my first pictures EVER... right here right now.

Here's some pictures of what I mailed off for my grad school application portfolios, to CCA and SFAI.
